All the fats is the Lord’s. The preists were therefore not allowed to eat fat. Fat helps burn offerings. However, the Lord is also concerned about the choleteroal level of man, in disallowing eaing of fat.

Moreover, fat is the best portion of offerings. We should give best to the Lord.
Fat is necessary to burn with offerings and offerings suggest the worship of God. In worship we praise the Lord and exalt Him. The Lord is worthy of all praise and honor, not man. If we praise man, he may not be in a position to digest it and it may be a hindrance to him. But not so for God, for he is worthy and no amount of praise to God is sufficient and he can therefore digest it. Oh, it is good that all fat goes to God! The sin of the sons of Eli against god was this only. They took out flesh with fat. In that way they were insulting God and took lightly the sacrifices to the Lord1 ( 1 Samuel 2:12-17,25-29)
