“As an apple tree among the trees of the wood”- means that Solomon was majestic looking among the crowd of males he was with…he was distinctive in the eye of the woman who desired him…
An apple tree especially when it had fruits was quite a spectacle among other trees. With it fresh green leaves and it many red fruits…it was beautiful/ handsome/ nice to look at, and fragrant too…
“I sat down under his shadow with great delight”- means that the woman enjoyed the protection, security and the comfort that Solomon gave her….Solomon was very very rich remember.
“And his fruit was sweet to my taste”-may mean as Roland G. explained, and can mean also that solomon exuded the fruits of the spirit and treated the woman (despites his other woman) with love, with peace, with patient, with kindness…
But say Roland G., Jayant C. and other readers, are you not curious why the wisest man who ever lived, married 700 hundred wives and 300 concubines?
Though he was lead astray in his old age by some of his strange wives but majority of his wives were Godly women, aren’t you curious why God allowed Solomon many wives? Remember that during the time of Solomon the Kingdom of Israel was under the Ten Commandments of God and His other Civil laws.

Jayant (Post #2)

Let me help you.

The words “fruit” and “apple tree” were old erotic symbols referring to Solomon’s male genitals. The extra-biblical literature supports this conclusion. Under this interpretation, the woman is longing to have oral sex with King Solomon. She wants to “taste” his penis or “fruit.”

You could also argue the contrary. Since apples reproduce asexually, this suggests the woman had a lack of sexual attraction, want of sex or want of offspring with the King.

You could also say the woman is just dreaming of eating an apple from an imagined one in the middle of a forest.

I prefer a different interpretation. The Song of Solomon is a love song about love, sex, and the eventual result of sex – offspring or more apples under the apple tree. The woman is dreaming of ENJOYING the fruit of Solomon’s loins and taking her place as another apple protected by the tree, that is, Solomon. If you view the archaic meaning of “taste” as meaning “enjoy or appreciate,” perhaps this may help.

You are welcome to post your own interpretation.

In that case, Solomon is the apple tree, thousand of fruits are the offsprings and Shulamite woman tastes one of the offsprings! Is that what you mean to say? Does sitting under the shadow of the tree amounts to eating of its fruit? What does sitting under the shadow of the aplle tree means?

The Shulamite woman compares Solomon to an apple tree in the middle of a forest. She is longing to take her place under the shadow of Solomon’s protection. Like an apple tree that produces thousands of fruit in its lifetime, she wants to have many offspring like apple fruit, sweet to taste.
